alright! this is john kohler with growingyourgreens.com.today we have another exciting episode for you, coming at you from my backyard garden,just admiring the beauty of my garden. look at this. look at these peppers. these areinsane. there’s different varieties, kind of congealing over into the other ones, gotthese nice dark leaf ones. they’re kind of purple, turning red, ripening ever so slowly.i’ve got these guys up here. sixty varieties of peppers this year and they’re all doinggreat. today’s episode’s not talking about peppers or any beautiful things happeningin my garden, including my tree collards that are going off right now. i’ve got so manyjuiced over and pounded. today’s episode is actually the last ofa series of episodes i filmed at the heirloom

expo. a lot of you guys have asked for thisactually so what i did was i filmed the presentation i gave at the heirloom expo. if you were notable to be there, i highly encourage you guys to be there. you guys saw on these past threevideos on the gyg channel, just some of the things that have happened there, and i wasthere a full solid three days. i was so busy doing stuff, i could barely pump out any videosfor you guys but that being said, i still managed to pump out about two, three hoursof footage for you guys. hope you guys enjoy it. without further ado, i want to get into today’sepisode, and today’s episode is sharing the talk i gave at the national heirloom expothis year. it’s titled “the two best ways

to use your crops or harvests” — or whateveryou’re growing in your life — in your life, to get them into you, to eat them sothat you can be the healthiest. it also goes into a little bit of my story, why i got intogardening, growing food, and as well as some other things that i do in my life and my background.so i hope you guys enjoy it and let’s get to that video. josh: good evening ladies and gentlemen, thanksfor coming and having a listen here to my friend, mr. john kohler. you probably knowhim well, follow his raw foods channel and/or his growingyourgreens channel which has had,by the way, an insane impact on my business, and that’s what john does. he has an incredibleimpact on each and every one of our lives.

once again, please welcome to the 2014 nationalheirloom expo, my good friend mr. john kohler, thank you. john: thank you josh. alright, so thank youguys for coming out tonight. today i’ll just be giving a simple talk, the two topways to utilize the produce you’re growing to increase your health. many of you guysmay know my story and many other guys may not. if you watch my videos, i do share mystory online. and for those of you who do not follow me online, you may want to checkme out. my website is growingyourgreens.com, those of you guys that have not known it.the people that didn’t know it, write it down because you’ve saw the lives of thepeople i’ve impacted. i came to walk in

here again and people stopped me, and it reallymeans a lot to me the way people trust one man and his camera. now the reason i got onthis one path, many of you guys may know, many of you guys may not know it, is because,actually here in santa rosa, i almost lost my life. and this is something that nobody wants tohappen. i was hospitalized with spinal meningitis, the doctors said i might not make it out alive.and there’s no cure for this spinal meningitis that i had, so i can only say i got throughwith higher powers. but when i was in the hospital, i realized what was the most important.and i mean i just graduated college and i didn’t have a lot of money or anything,but again, john, when you get out of college

you’re supposed to get a high-paying job,make a lot of money, have all this money in the bank, a nice car, a nice house, a nicelife and all this kind of stuff. i didn’t have any of that. and i thought,john, even if you had a million dollars, a nice car outside waiting for you outside thehospital, what good would that do you right now? right now? could you write a check, mr.doctor, for one million dollars, do not cash unless john walks out of here. like all themoney in the world could save me, and all the people that are millionaires, gazillionaires,trillionaires lose their lives all the time because they’re so busy chasing money. andthat’s not super important in my opinion that many are led to believe in society itis important. like money.

so, it was at that point when i was in thehospital that i really realized what was the most important thing, because i was goingto lose it and that was my life. my life was the most important thing. and i want everybodyin here to start valuing your health, even if it’s just a little more. i’m reallygrateful today that i woke up this morning because some people didn’t wake up. andi try to always live with an attitude of gratitude, and because i almost lost my life and madeit out of that situation, one of the things i vowed is that i would never put myself inthat situation again because i was doing things unknowingly that made me end up there, likeeating the standard american diet. and yes, i thought i ate healthy. i quit eatingred meat, i read my ingredient labels like

i’m supposed to, i shopped mostly at healthfood stores. i know many of you guys might be doing that today, but that still endedme up in the hospital. i asked the doctors, “well why did i get sick?” none of myother fraternity brothers i was playing broom ball with the night before, why didn’t anybodyelse get sick except me? and so the doctors said i had what’s called complement immunedeficiency, and basically what they said is, they blamed a chronically weak immune systemon me getting sick and that i have a weaker immune system than the average person. so you might’ve seen the boy in the bubblemovie back in the 70s or whatever, and then the standard person. if the boy in the bubblegot out of the bubble he loses his life. i’m

not as bad as the boy in the bubble but i’mnot like a normal person who has a pretty good immune system. i’m maybe somewherein the middle, so i really need to pay attention to build my health so i wouldn’t put myselfin that situation again because the doctors said i would get spinal meningitis again orsome other disease, and not be so lucky and come out of it. so when i left the hospitalbecause my life was the most important thing to me, i decided man john, you got to figureout how to build your immune system and build your health so you’re never in here again.that led me into making dietary changes in my life, and then one of the principles ilive my life is cani. it stands for constant and never-ending improvement.

this is one of the techniques the japaneseused after we bombed them in the world war and we sent them a businessman over thereto teach them this philosophy of constant and never-ending improvement and that’swhy, back in the day, companies like sony and even today companies like toyota and honda,they make very dependable cars. i’m trying to sell my parents’ car right now. it’sa 1992 honda civic with 229,000 miles, original engine. they changed the oil religiously,they’ve done all the service, and if you needed to buy one of these cars, it’s quitedependable. asking $1,600. but anyways, it’s been quite dependable and it’s never reallyhad any major issues. yeah the power string went out and they changedthat last year, and they got to buy new tires

and brakes and all that, but it’s very dependablebecause this model of constant and never-ending improvement, even if they think they’vegot something good, they’re going to dissect it and figure out how they can do it moreefficiently, how they can stamp this trunk panel better, how they can make the seat inthe new honda fit. actually, instead of just fold down and be flat you can actually foldit up so that you can put plants that are pretty tall in your back seat, which is reallycool, because i thought it’s dumb how a lot of cars are made. they do these thingsand in my opinion, the american carmakers haven’t kept up with all this kind of stuff. this is the technique or the philosophy thati live my life by where like okay, i’ve

increased my health by changing by diet, eatingsome of the best foods on the planet, which is fresh fruits and fresh vegetables, butthe problem is, even if i’m buying conventional food in the supermarket or even organic food,it’s grown by big agriculture. and big agriculture’s concerned with one thing. once again we’regoing into that money realm and that tends to taint things, when they’re just intothe business for growing organic food, and we’re talking big companies here, for profits.and even most farmers. most farmers, they have to feed their familiesand when it comes down to it, if they’ve got to look at the financials and they haveto be profitable. i have to say there are ways to be profitable and still grow highquality food, but the fact of the matter is,

most people, most farms, industrial agricultureis not growing high-quality food. so that’s why i got into growing my own crops and istarted sharing this at my youtube channel growingyourgreens.com. i presently have 172,000people that follow my works. i’m currently the most watched internet gardener online.my shows are 100 percent free. i have about 980 shows right now when i show how i canconvert my front lawn into an all raised-bed edible vegetable garden. i live in a standardsuburban tract home; i don’t live on acreage or anything, and this is just to show whatpeople can do in their situation and their spot, because most people live in a standardsuburban tract home. it is really easy and i just basically documentedhow to do that in my videos where i show i’m

mixing the soil, how i plant the plants, howi’m building the new raised beds and when i travel, for fun i like to travel and i visitfarms and different places and meet people and interview them and show them what otherpeople are doing. so basically i try to be like an evangelist in one sense, but alsoshow examples of what other people are doing, because you might like one idea, oh john didthis, i like that, or you might think, man, john’s ideas suck, but he went to this placeand i saw this and this is really cool. several people here told me they liked thisepisode that you had at this place, i really liked that idea, so there’s always somethingto glean from my videos. and my videos, the reasons for that is every time i make a video,one of my goals is to have a message in the

video, a point that i want to get across,like the old leave it to beaver. the older guys are laughing, because beaver always learnssomething at the end of a leave it to beaver episode and i always try to teach you guyssomething at the end of my videos. and so hopefully i’ll be able to be effective withthat with you guys today. so that’s why i started growing my own food,once again because i was already eating a really good diet with fresh fruits and vegetables,the best food on the planet, but i was not eating enough. the standard american dietis very deficient in fruits and vegetables. it only gets you to eat only five to nineservings a day; i probably eat about 20 to 30 servings a day, because i don’t wantmediocre health, because mediocre health ended

me up in the hospital. i want the highestlevel of health so that i don’t end up in the hospital again, and i found it througheating fruits and vegetables. and more importantly, my latest study andwhy i got into gardening is because fruits and vegetables, but what if you’re buyingfruits and vegetables that aren’t that food from the store, and i could do much betterand all this stuff here, except for the watermelon, i grew in my garden? i just harvested, wellthis stuff was harvested today, this stuff was harvested awhile back. but i mean thisstuff, all this produce in my garden i use things like rock dust and worm castings, composttea that i get from josh, and all these things build the soil.

it builds the soil health, the health of thesoil is the health of the plants, and when i eat plants, that all comes into me. andit’s a really big cycle, and people worry about feeding the plants. no, we need to befeeding the soil above all else, and that’s what i try to do. i try to build the soiland nature gives it back to me. so that’s why i want to share with you guys the bestways to build your crops because a lot of people may do canning, they may do, i don’tknow, cooking up their zucchinis and barbecuing them and in my opinion, that’s not the bestway to be using your crops. for me, the best way to be using your crops is in their rawand natural states. no other animal on earth cooks its food, andi think we should eat a good percentage of

raw foods in our diet that’s uncooked andeat those because they have the highest level of nutrition, and they also have enzymes.when you start cooking and eating foods you lose all the enzymes, which are catalystsin the food that help digestion and many processes in the body. it also lowers nutrition, especiallysome of the most important nutrients which are called phytochemicals and phytonutrients,which is what i’m most after. some of these nutrients are the most health-protective,and i actually forgot in the walk-in cooler inside the fridge in the kitchen, top shelfthere’s a bag with some of my greens. could somebody grab that for me? i was thinkingphytochemicals, where’s my kale? but i harvested dinosaur kale from my garden today that’sreally rich in phytochemicals and some of

these families of plants, like the cauliflowersor the plants, broccoli, bok choy, kale, all these things have really powerful nutrientsin there that have been shown to help prevent cancer and fight cancer and things like that. i guess there different studies on broccolisprouts to prevent cancer. another family of plants that are really valuable are theallium family of plants — garlic and onions, really valuable to prevent cancer. once again,i want to not get these things. i want to be proactive in my life, just like my dadchanged the oil in his honda and run 229,000 miles with no engine rebuild and you guystake care of the engines but you guys got to take care of your bodies because you’veonly got one. you can rebuild the engine;

you can’t rebuild yourself if you lose yourhealth. inside here, we’ve got some, here we got some cool stuff. we’ve got dinosaurkale picked out of my garden, grows really well, and the other thing i’ve got is really,really cool, really, really rich in phytochemicals and stuff, anybody know what this is? celery cabbage. those would be excellent guesses.those are all related to these guys. no, not parsley. so this is actually called ashitaba.that was actually a trick question. no one probably knew what this was. but this is ashitaba,this is why i’m telling you guys about this. this is ashitaba, also known as angelica keiskei,and this is related to angelica, so if somebody said angelica, that would’ve been prettyclose. and actually it’s pretty funny, because

this stuff actually bleeds this, i don’tknow if you guys can see, it’s pretty small, it bleeds a yellow sap. so, if we break thisoff, like we bleed red, this stuff bleeds yellow. and in its yellow coloring, thereare these things called chalcones, which are very powerful antioxidants. they’ve done research in japan. this isoriginally grown in japan on hachijo island, a special place with really rich soil, andthis variety of angelica came up. they’ve done a bunch of research and it’s cancer-preventativeand all this kind of stuff. i try to include this in my diet. another reason i like togrow food is because you just can’t buy some of things i want to eat. i go to thehealth food trade show, actually next week

i’ll be in baltimore, maryland for the naturalproduct expo east, the second largest trade show for the health food industry, and i gothere, and how i learn about ashitaba is because i saw in the health food industry they wereselling powdered food supplement pills of ashitaba. so i go to the ashitaba, and they have allthis research and data and clinical experience on it. like, that’s good, i’m going tostart to take that, but wait, well what’s better than little pills and bottles thatyou got to keep rebuying, right? grow a plant and you have it forever and you can make theseeds and spread its people and share it, and freshest is always bestest, i like tosay. once you start processing thing, it breaks

down and you lose nutrition in there. if youhave any questions, please write them down and we’ll have a session at the end forquestions. some of these powerful phytochemicals and phytonutrients is why i’m eating myfood. we all need calories, but the problem with the americans’ diet today is they’reeating far too many calories, like fast foods, junk foods, we know these things are highin calories, but if you look at the nutrition facts of fast foods and junk foods, it hasvery little to no nutrition. the leafy greens especially are the highest in nutrients, phytochemicals,phytonutrients, antioxidants, vitamins, and minerals, and very low in calories. and so that’s simply what i’m going toshare with you guys today: two of the best

ways that i’ve learned to use the cropsin my garden to get them into me so that i can have these phytochemicals and phytonutrientsso that i will not get sick, and so i can have the best engine and fire on all eightcylinders. those are simply, very quickly, juicing and blending. i know some of you guysmay be thinking, “but john, the juicer, what that does, you put something in the juicer,out one side comes the fiber and the other side comes the liquid, so you’re gettingrid of the fiber. and we all need fiber! fiber is very important in the human diet.” andit’s absolutely important. but if you’re still eating chicken, beef,turkey, pigs, all those foods, have no fiber, so don’t complain about me juicing whenyou’re eating all these foods that don’t

have the fiber. and it’s been proven, andyou can check nutritionfacts.org, it’s proven to be a big factor in causing disease in myopinion. so when you juice the leafy greens especially, because we’re not made likea cow, we can’t digest the fiber in the leafy greens, we don’t have three stomachsand regurgitate and all this kind of stuff, but the juicer extracts the fiber and liberatesit from the juice. jay cortes, formerly known as the juice man, who i saw last year, he’scurrently in his 92nd year i believe now, promoted juicing back in the 90s, and that’swhat got me into juicing. he said it’s the juice of the fiber thatfeeds you, and that’s really what it does. this morning i juiced watermelon. watermelon’samazing juiced. you might be thinking, “john,

why would you juice watermelon when you couldput it in the blender?” because it’s so easy to blend up. well when you put it inthe blender you keep the fiber and also the thing that many people don’t realize aboutthe blender is that when you’re running the blender it’s running at incredible fastspeeds. if you have a vitamix it runs in excess of 20,00 rpms, this blender probably runsat 15,000 rpms. so every revolution, it’s doing a couple things. it’s sucking in air, because it’s creatinga vortex, it’s adding oxygen to whatever you’re blending so it’s going to get arise in the amount of liquid you’re containing so you’ll have air bubbles in there thatwill oxidize the food. one of the doctors,

dr. brian clement said you will lose about95 percent of nutrition in the blender. i don’t know if i’d go that far, but myopinion is always better to do something more low-speed, like my juicer here runs at 80rpms. and yes, i do blend and i juice. in my life i do both, i think they both havetheir benefits, and you can do whatever one you want to do. “john i’m not going to use a juicer becauseit’s a pain to clean.” this one takes me three minutes to clean, that’s too longfor you, i can wash out the blender in 30 seconds. any way that’s going to get thefruits and vegetables in you is definitely a good way. i want to go ahead and show youtwo quick recipes. so let’s see, first we’re

going to use a juicer, super simple, supereasy. cucumber, from my garden, how many people know what this is? armenian cucumber, alright,let’s test here. what’s this one? lemon cucumber. what’s this one? that’s a standardmarketmore. now, this cucumber. achocha, who knew that? there! alright, so i have driedachocha. look, this is like the ultimate seed packet right there. these are small, theseare bolivian cucumbers, and these taste different than a regular cucumber. these in my gardenhave been more hardy. so when the frost comes and i get powderymildew on my cucumbers, these guys are still producing for me. but these guys do take alittle bit longer until they start producing, like you’ll plant them, they’ll grow,there’ll be a big vine and then john, it’s

not producing yet! that’s because they takeawhile. nature’s seed packets. what happens is this gets bigger, it turns from a green,and this is still very immature and small, they get bigger, then they turn from a darkgreen to light green to yellow, then they just dry out like this. and all the seedsare contained here. i’ve brought a bunch so we’re going tothrow them out to people because i like to give people treats and see how far i can throw.it’s always fun to spread my seeds around, if you know what i mean. i’ve got a girlfriendnow. i’m saving all my seed for her. alright, there’s one more. oh, i’ve still got alot more! who didn’t get one! let me see how far i can reach these! alright, two left,right in the back! one more! i like having

fun, too. i’ve got to get juicing here,we’re running out of time. so we’re going to go ahead and juice my armenian cucumber.one of the cool things i like is i sell different juicers, i have to give you guys a disclaimer.discountjuicers.com is my website. i test all the different varieties of juicers,i have youtube videos comparing one juicer against another and everybody always asksme john, what’s the best juicer? well it’s kind of like asking a lady what’s your favoritepair of shoes, your best pair of shoes? and it depends on the event or occasion you’regoing to. if you’re going out running you’re going to wear running shoes. if you’re goingout to the beach you’re going to wear sandals. and for me, a juicer’s simply a tool. ihave a whole collection of shovels, i have

a whole collection of juicers, depending onwhat i’m juicing. most people are only going to have one juicer,and i’m sure some ladies here only have one screwdriver, but i’ve got a lot, andmy videos are basically there to help people determine the juicer that’s best going towork for them. i like this one particularly because it’s auto-feeding; you sit somethingin there, you don’t have to deal with it, it just sucks it right in there for you. oneof my normal juices i like to make is a cucumber, celery, and some leafy greens from my garden.so i think today we will use some of the kale. sometimes i like to precut the kale. it worksa little bit better in the juicer. and this is just a very simple and easy-to-makegreen juice and once again, we’re breaking

down the cell walls of the kale to get thenutrients and you’re going to see here pretty soon, a nice dark green mixture coming outand this is simply you’re seeing the chlorophyll and all the nutrients that have been liberated.think about it, we are nothing more than juice extractors. we eat something at one end aliquid comes out of us, one end a solid. so when we do this, we separate out the solids;our bodies don’t have to deal with the solids and we get the instant nutrition. this stuffis much more easily digested than food; this is especially true if you’re not chewingyour food well. i encourage everybody to masticate their food, that means chew your food well,like if you put it in the vitamix blender. it’ll take two, three hours to eat a wholemeal. the salad should be your main course,

in my opinion. if you want more informationabout a really good diet style, i would recommend, there’s actually by dr. joel fuhrman, eatto live. he does come out with subsequent books aswell on the topic. dr. joel fuhrman, i recommend his eating style, where he recommends eatingnutrient dense foods, whether that’s to lose weight or to have the highest level ofhealth. that’s one of the diets i definitely like a lot. i personally eat a raw nutritarianstyle diet, so i eat raw foods with very high nutrients in it because once again, i wantto be as healthy as i can. so we’re just cranking all this kale in and a lot of juicerscan’t process the kale like this juicer can. this runs at a low rpm.

many people may see the high-speed juicers,sounds like an airplane taking off in your kitchen and on the leafy greens, those arevery, very inefficient. so we’re just going to go ahead and drop this cucumber in. it’sa little thick for the spouts, so we have to help it in there a little bit and oncewe get it in there a little bit it should start dropping in and juicing. even thesebig squashes, i was juicing pumpkins last year. i grew the kakai hull-less pumpkins,so they have the seeds without the hulls on them, so if you like eat pumpkin seeds withoutthe hulls, got to get the hull off there. the kaki pumpkin grows the green seeds youget, at the health food store you can eat straight up and i’d tell you, the differencebetween the ones from mexico they import and

sell in the health food stores from the onesi grew and dehydrated at low temperatures, they’re almost salty on their own withoutadding anything, especially with all the little strings that hold on to the seeds. all that and the seeds are so delicious butpumpkin apple juice, this juicer does it, i have videos on it, it’s so amazing todrink pumpkin apple juice. so even large squashes, when they get big, will go right through thejuicer. the most nutrient in the food is in the skin. we want really this rich coloringand the pigments in there, and by juicing, you know you’ll get this nice, rich colorfuljuice. i always recommend making colorful juices and eat the rainbow, very important.we just juiced a bunch of stuff making about

20 ounces of juice. one meal for me rightthere, on average i drink between 32 to 64 ounces of juice a day. i like green juice the best, sometimes it’llbe fruit juices, i think it’s very important to get your leafy greens in, those are thefoods on the planet with the most phytochemicals and phytonutrients that are the most protective,and most americans are simply not eating enough leafy greens. for kale, i think the per capitaconsumption of kale in america is like a quarter pound, per year! think about it, unless you’regetting it on the side with your sandwich or something, most people just don’t eatkale, and that’s ridiculous. i mean my goal is to eat two pounds of leafy greens a day.

now do i always do that? no, but if i takeone pound of leafy greens through the juicer — one pound of leafy greens, that’s alot of greens, right? that’s a lot to eat. but if i stick one pound of leafy greens throughthe juicer, i get only one cup of juice, so now i have all the concentrated nutrientsfrom the pound of greens in one cup of juice. there’s one pound down, and my next poundwill probably go in my blender. and that’s what i’m going to show you guys next, actually.the next thing i want to show you and demonstrate is simply what i call a blended soup. youmay have heard of green smoothie, it’s another way to get your greens in. super simple, supereasy. for green smoothie, you’re going to putsome water in the blender, you’re going

to put some bananas in the blender. that makesit nice and sweet. and then just put a few leafy green leaves. if you have kids, youmight not be used to eating dark leafy greens, so do all bananas, water, and do just oneleaf. it’s going to taste so sweet, they’re not even going to know the greens are thereonly because it’s green. and add two leaves, three leaves, to the point where they startcomplaining, and then back off a little bit. and you guys can do that, too. you guys arelaughing. even adults can do this because i know, i made some nasty creations in theblender. trust me, i’ve had to hold my nose and get it down. i’m getting produce man! not wasting it!so, my rule of thumb is this, you want to

keep it under five ingredients. don’t makeeverything but the kitchen sink blended smoothies and juices. in many cases i might just usethree ingredients. the perfect mix for me, if i had some celery, cucumbers and some leafygreens. the leafy greens out of my garden are much more mild. your juicer doesn’tcare if they have bug holes in them. that’s some of the ways i like to use the big ones.when i’m feeling special i’ll harvest all my baby leaves in mass abundance becausethe baby leaves are more tender, they’re not quite as strong-tasting. this is especially important with things likethe kale to get those greens in me. going back to the blender, so that’s the greensmoothie, basically water, bananas, and some

greens. you could also do water, apples, andsome greens. what i like to do sometimes is orange juice, and greens. basically we wantto get more greens into us and besides the green smoothie, another thing i like to dois called the blended salad, and this is many times what i eat for dinner. i travel a lotand many times i’m on the go and i can’t just sit down and eat my food for literallyan hour or two and chew my food and masticate it into a mush. this is why we feed babies baby food, youever think about that? why do we feed babies baby food? because they don’t have teeth.they can’t break everything down into a mush and so we got to feed them in the mush.because we have teeth, we’re supposed to

break them down into a mush for optimal absorptionand digestion to mix it with our salivary amylase, the enzymes in our saliva to chewit up. we don’t have teeth in our stomachs or anything like that. we have probiotics and beneficial bacteriaand yeast that help break down the food, which is the probiotics for our guts, which we alsoneed probiotics in our soil. it’s kind of funny, soil health and human health, they’revery closely linked, and this is going to be coming out more and more in the future.so that’s why i like to process the food or break them down. to make the work easierfor my internal flora. so what we’re going to do is we’re going to make a blended salad.and instead of eating the salad, which i would

have to eat and chew up, i just put it inand i can just take it and drink it down. it’s important when we’re drinking a juiceor a blended smoothie is to be sure to still chew your food. just because it’s in a liquid state, don’tjust gulp it down, all this wheatgrass tastes nasty. you want to swish it around, mix itwith some of the saliva there and drink it and savor it slowly like you would a finewine. and sometimes i make things tastes so good, it’s simply amazing, especially wheni’m eating things out of my garden that are growing out of the rock dust and especiallysweet and flavorful. and my recipe every night always changes. i never make the same thingtwice because what i eat every day is based

on what i have ripe and ready in my garden.right now i have the bounty of summer. here i have abundance like cucumbers and tomatoesand peppers and basil and achocha and all kinds of different stuff i could be using.and so i’ll pick the ripest stuff, the things that i want to eat, and that’s what goesinto my smoothie or my blended salad. it always changes. so the first thing we’re goingto do is put in one tomato. it’s especially important, when loading up your blender, isto put all the watery liquids in first. so it wouldn’t necessarily be too good to putin leafy greens first because it wouldn’t blend too well. i do recommend a high-powerblender. it’s very important to have a high-powerblender that will break up the food. if you

have one of those cheap $20 jobbies from walmart,they’re not powerful enough, they’ll leave large fragments and bits and it won’t beas fun of an experience. i really want to have the finest particle size so they havethe vitamix booth inside and i recommend the vitamix blender. it will really fractionatethe food and turn it into the smallest particle size i’ve tested, and i’ve tested manyblenders on the market. the particle size is very important so we get the best digestion.other than the vitamix, because that’s a $500 unit, this one’s a fairly good one. it’s called the wolfgang puck and it’slike 1.6 horsepower. the vitamix is like 2 plus horsepower and i do have a few of theseavailable today, see me afterwards. this is

only $70, so much more affordable. but high-poweredblender, very important, especially to grind up all the leafy greens. so we’re goingto go ahead and throw one tomato in there. let’s go ahead and throw more tomatoes inthere and put in two lemon cucumbers in there. pre-chop them so it’ll be a little easier. and this could go in my salad normally. actuallylast night, i had lettuce and all the same similar stuff. once again, the best way, besideschewing them and eating them, grinding them up with your teeth, is to put them in theblender. and this has a unique flavor. for me, it tastes halfway between celery and lettuce,but then i had a friend over and she tried this stuff, and she’s like, “that stufftastes bitter like dandelion.” i don’t

get that, but also, i’m really used to eatinggreens straight out of my garden. i like to go outside and sometimes i don’t even makea salad or anything i just go outside and snack on the foods, and we’ve all done thatin our gardens, but i literally make a meal out of that stuff. i want to share, the best part of any plantto eat, especially if you’re eating leafy greens, is always the baby greens, alwaysthe youngest growths, there’s the most plant hormones in there. and also, they’re themost tender part of the plants, like the baby leaves, wow. you have to grow this to tryit. i love it, it’s an acquired taste i suppose. some people might not like it. sonow we’ve got some tomatoes, cucumbers,

some greens, let’s put a couple peppersin there. one of the things i'm not really keen on is labeling all the stuff i grow soi throw it all together. if it’s food, i’ll eat it. i’m like oh this variety and thatvariety and i have no idea. it’s all food to me, get to eat it. now you could put the seeds in here becausethe juicer will grind them up. i like to take them out for whatever reason. one of the thingsi like to do also is add one little hot pepper. that’ll add some spice to it and one ofthe things i do not like to do is add some salt to my foods. most americans eat far toomuch salt, and eating too much salt in my opinion is not a healthy thing. so i try toadd spices and things and different flavors,

so that i do not have to add the salt. sonow besides all the stuff out of my garden, i like to add a few other things. actually, another really excellent way toprocess the food out of your garden is to ferment it. after juicing and blending, fermentedfoods are one of the best ways because what you’re doing is taking the nutrition inthe vegetables you’ve grown and then you’re fermenting it, creating more lactobacillusor lactic acid bacteria, which are basically the beneficial microbes in our gut that helpsus digest our food and so, it’s very important to have a very good flora in your gut andbesides eating the probiotic-rich foods, all the fruits and vegetables will encourage theprobiotics in your stomach, because fruits

and vegetables are known as prebiotics. some fruits and vegetables are better thanothers. arthichokes have the inulin, also the acone, that also has inulin, so that willfoster the growth of the probiotics. one of the coolest things recently that i learnedis that there’s this beneficial yeast which is also known as a probiotic, i know everybody’sheard about canned yeast and that’s a bad use, and the way people would get it beforethey started patching it up and putting it in bottles and selling it to you at the healthfood store was on the skin of lychee. how many people have eaten lychee? so on the skin of the lychee they found thisyeast that grew naturally and when people

would eat the lychee, they would eat someof the skin or something and then they get this beneficial yeast that has all this researchabout it. nowadays to help your digestion and all this stuff, that actually kicks assagainst the bad yeast. so making your own kraut. i didn’t have my own kraut todayso i have this kraut here. it’s actually called farm to ferments, and this is comingout of windsor. they actually have a booth right over there. this is some of the bestsauerkraut or fermented foods i’ve had. this one, the name is escaping me, but it’san el salvadorian recipe of a ferment, and it is off the hook. so every night for dinner,i like to add some fermented foods in my blended salad, so that this gives you that umami flavor,which is really cool. there is also a little

bit of salt in here but it’s mostly forthe flavor plus i’m also basically putting probiotics in there so that i’m going toget them. another thing, this would be kind of plain if i didn’t have any rich bodyand because i don’t eat any animal products of meats, what i like to use is nuts. so idon’t have any nuts today but what i did get is this nut butter, which is from thephilosopher’s stoneground. they’re a company inside the grace pavilionand they make some of the best almond butter that i’ve ever tasted in my life. i don’tparticularly digest almonds too well for whatever reason, but this almond butter i could digestmuch better because most almond butters, well if you’re buying raw almonds in the storethey’re not raw and almond butters not really

raw because the almonds have to be pasteurizeddue to california state law. the nuts are from california and have to be pasteurizedby heat or worse, by chemicals, and i think it’s really sad is what big companies andagriculture are doing to the food system. we don’t really have a say unless you growyour own trees, but what they do is they source almonds from spain that are not pasteurizedand then they take the almonds and they germinate them. they soak them in filtered water, theystart to sprout, they start to lose the enzyme inhibitor, they lose some of the bad thingsthat are in the almonds, they start to sprout a seed, they start to germinate and startto have more nutrition in there. also, the fat percentage starts to lower a little bit.so then they sprout it and then they take

the nuts and they dehydrate it at 150 degrees,which is a low temperature. and then they stone grind it for six hours.this is like artisan quality nut butters right here, and i just tasted it well yesterdayfor the first time, and it’s insane. so we’re just going to go ahead and put inall this nut butter, tahini. some nuts, if you have a powerful enough blender, it’llactually blend it up for you. this would be something like my sample dinner, i would probablyadd more leafy greens. and then i would take it and blend it up. yeah so normally my dinner,and if i make dinner blended up like this, all the way up to the top, this would be mynormal meal. you can eat stuff from your garden from nutrient dense soil with rock dust andworm castings, all that kind of stuff.

people always say, “john, i like to usethe whole food. it’s got the fiber.” well number one, i always talk about the oxidationthat occurs with the blender. the other thing i didn’t mention is that when you go toa place that takes incurables, like say you have cancer and the doctor says you’ve gotsix months to live, you’re at the end of your life, you’re screwed, there’s placesthat take these patients, there’s one called gerson therapy, there’s one down in mexiconow, and there’s one called hippocrates health institute down in west palm beach florida. these people don't feed people blended smoothiesto get them better with cancer, they feed them juices. they know that the juices goright in, and they’ve been doing this for

prepare the kale? i like to say freshest isthe bestest but of course if you’re eating spirulina and beef powder instead of junkfood bars from the health food store, that’s way better, but when you’re traveling ialways encourage you to harvest wild weeds sometime and no matter where i am, there’salways a supermarket with sprouts or something like that. i usually travel with my nutribullet,a small blender, they’re available for like 80 bucks at costco or target you can get themfor about 100 bucks. it’s a very powerful blender, not quite the vitamix but it’sthe most powerful blender for the cheapish price and the smallest format. you can takeon fruits and vegetables and eating healthy while traveling, and i’m able to keep upthis diet. yes?

woman: what’s the best way to identify wildweeds you could eat? john: the question is what’s the best wayto identify wild weeds you could eat? i’m definitely not an expert on this subject,so i’m going to say consult with a local expert in your area. i know in this area theyhave wild food weed walks where you’ll just go out with people, herbalists or whatever,and they’ll share with you the edible weeds. one of the things i like to do is get theweeds when i’m on one of those walks and get the seeds and bring them back to my gardenand grow them, so i have a relationship and intimately familiar with those plants becausei grow them and have them for their whole life in my garden. plus i’m growing, inmy opinion, higher nutrition weeds you can

get in nature because in nature, you don'tknow what’s in the soil and yes, it’s better than standard agriculture, but it’sprobably not better than when you’re bringing in rock dust and the microbes and mineralsand all this kind of stuff in my garden. so i have super weeds. yes? woman: two questions. one is, what percentof your fruits versus of your vegetables do you eat, and how do you get protein in yourdiet? john: good question. so the question is what’sthe percentage of fruits and vegetables that i eat, and how do i get my protein in thediet? let’s start with the easiest question first. the easiest question is how do i getprotein if i’m eating fruits and vegetables?

i can answer that different ways because i’vebeen asked this question over the last 19 years since i’ve been on this diet for 19years. i mean this is still an experiment for me, but it’s a 19-year experiment thati think is working pretty well. i’m fit and trim and generally people, if i ask themhow old i am, they usually guess i’m 20 years younger than i actually am. but yeah,the protein is a no-brainer. as long as you’re eating enough calories you’re going to getenough protein. if you look at a chicken or a cow, what arethey eating? if you’re a cow you’re eating grass, or worse, these days cows are justeating soy beans or corn that are genetically-modified. they’re still getting their protein andthey’re still 200 pounds. so as long as

we eat fruits and vegetables — fruits andvegetables have protein — and in my opinion, one of the big challenges with america ispeople have been led this protein myth. if we focus on protein in my opinion, you’regoing to get enough if you eat fruits and vegetables and eat enough quantity and you’renot starving yourself. but we really want to not focus on protein, you want to focuson phytochemicals and phytonutrients which america has not been focusing on. that’squestion number one. the second is what’s the percent of fruitsand vegetables. so the majority of my calories in my diet comes from fruit, and then i eata lot of vegetables. this is just what i do, and i recommend finding the balance that worksfor you. i mean for me, it’s all or nothing.

for everybody out there it does not have tobe all or nothing. the main message i want to leave you guys with tonight is eat morefruits and vegetables, and even if you’re eating other things that don’t have fiberlike the eggs, the chicken, the beef, the cheese, i don’t care. but increase yourfruits and vegetables, eat that, and your reward is a little bit of cheese, a littlebit of meat on top of your salad, i don’t really care. my goal is just to eat more nutrient-densefoods and reduce or eliminate, if that’s what you want to do, the bad stuff. yes? man: how would you compare this to cold pressinglike in a norwalk juicer? john: how would you compare juicing to coldpressing in a norwalk juicer is the question.

so the norwalk juicer, the first stage ina norwalk runs at 300 rpms or something like that so it runs fairly fast. and i like thecold pressed juices. the cold pressed juices, known as the norwalk, and the other juices,they make a very high nutrient quality juice, with good nutrition, and it’s also microfiltered so it’s very clean and easy to drink. i’ve seen studies that certain juicers likethe green star elite juicers, one of the juicers i sell at the company, so the company dida study between their juicer and the norwalk, and showed that their juicer pulled out morenutrition than the norwalk does, but it also has infrared and bioceramic technology todo that. so how does one of these compare?

i haven’t really ever seen the testing butthe fact is the norwalk is a $2500 juicer, most people cannot afford at $2500 juicer.this one i’m selling now for about $280, so you can get about ten of these for onenorwalk, approximately, or maybe nine. i’d much rather have one of these because thenorwalks are a bit of a pain in the ass to use. but if you can afford a norwalk by allmeans, any way you can get juices in you is a good thing. yes. man: how does that do with grinding up commonweeds to juice? john: how does that do with common weeds tojuice? once again, a juicer to me is a tool. would you use a flathead screwdriver on toa phillips screw? that’s kind of like getting

this to juice straight weeds, wild weeds.it’ll work, we’ve all gotten that flathead to unscrew that phillips flathead, i’vedone that millions of times. so this one you can juice weeds in it but it’ll tend generallyto clog up and not work the best. but the one i would recommend for wild weeds or medicinalherbs, would be the omega nc 800. that by far is the best for things like wheatgrass,for sprouts, weeds, and even medicinal weeds of medicinal plants. yes. woman: what’s your opinion on yogurt? john: so it’s what’s your opinion on yogurt.i’m not a big fan of using any animal products myself personally. that’s my opinion. soi’d rather use i think the beneficial part

of the yogurt is the culture, not necessarilythe fermented milk from another animal. if i did do yogurt, i’d do human yogurt. oneday i’ll have a wife that’s pregnant and get to do that. because that’s the milkwe should be working, it’s human milk. we shouldn’t be drinking cow milk because that’slittle baby cow growth hormone. the cows feed it to their little cow so that they can growto 2000 pounds. if you’re drinking cow milk, you…i don’t know, anyways, i like theprobiotic in cow milk. i like to make coconut yogurt, so i’ll take the coconut meat andput the same probiotics you would put in the milk to curdle it to get the beneficial nutrients.plus there’s fat, there’s medium-chain acids in the coconut that’s really goodfor us as well. so that’s my opinion on

that. any other questions? yes. man: so, you mentioned rock dust over andover again. what’s so beneficial about that in your garden? john: sure, so the question is i mentionedrock dust over and over again in my talk. rock dust is one of the unknown nutrientsthat’s in agriculture and even in home gardening. if you go to any big nursery, many nurseries,you ask for rock dust they look at you like you’re from the moon. if you go to homedepot, lowe’s, they have no clue what rock dust is. they’ll try to sell you some gypsum,some kind of green sand or whatever. so the rock dust, what it is is basically powderedup rocks. rock dust can be as easy as going

to your local rock and stone quarry that aregrinding up rocks to put under layman in the streets or in the sidewalks to a fine particlesize. or it could it be something as good as whati use, which is horticulture-grade rock dust where they’ve identified certain kinds ofrocks, that they grind up, put it into a fine powder, which now you’re adding 70 differenttrace minerals into your garden. so most agriculture is concerned with free minerals; we’re alwaysconcerned with the n, the p, the k, and some egronymous-made deal with 15, 16 mineralsif they’re really into it, but the reason for the rock dust mainly is to get back asmany nutrients in the soil and from my testing experience, how many people here have usedrock dust and seen a difference?

look around. so anyways, people that watchmy show, i really talk about this. you’re really luck you guys are in santa rosa becausethere’s a store called leballister’s, they’re on sebastopol road. you could buya bag of about 44 pounds for what’s 20 dollars, and the cellar inside also sell it but it’s$22. you have to go to a specialized store. josh, at the boogie brew company, i don’tknow if he brought any but he sells a couple different kinds of rock dust and each oneis a little bit different. i like to take the different kinds and use them all in mygarden to give my plants the nutrients that they need because i’ve seen a difference.people out here have used it, they’ve seen a difference.

i recommend you guys experiment. if you don'tthink it’s going to work, use your regular potting mix without it in one bed and anotherbed of tomatoes with it and wait for a whole season and look at your yields, see what yourplants look like afterwards. in my opinion there’ll be a difference and the opinionof other people that have used it, this stuff just works. very important. it also adds nutrientsand minerals into the food. in this day and age we’re supposed to eat junk food thathas low nutrition and then take a vitamin for our minerals and vitamins like centruma to z of zinc. why do we need to do this? did a thousand years ago, a hundred yearsdid they need to take a to z centrum? no. they have more nutrients in the soil becausethey didn’t have soil depletion, soil erosion,

chemical fertilizers that are messing up thesoil. they had all the nutrients in the soil and in a closed system nutrient cycle. andin our system now, we’re taking crops, tons of crops off the land and we’re puttingfree minerals back in. that just doesn’t add up for me. so that’s why it’s superimportant to give back to the earth what we’re taking out. i actually not only try to giveback but put more than i’m taking out so my plants have a buffet, kind of like in lasvegas. and in las vegas, you have all different kinds of selection, you have all kinds offoods. you don’t know what you want to eat until it’s in front of you. so if i putall these minerals in my soil, i just let the plants figure it out because i put itin nature’s balance. and the rock dust is

nature’s balance. man: is it like azamite? john: exactly. azamite is a brand name forgreen glacial rock dust. there’s another one called cascade minerals, another one calledelemite. man: what about sea salts? john: sea salts. excellent point. so sea solidsare another excellent way to add the trace minerals into your garden. so the sea salts,there’s a company out there called sea 90, that’s one of the products i use, and that’sanother excellent way to get the minerals in. my friend don weaver wrote a book on remineralization.there’s several good websites, remineralize.org.

there’s another website, soil and healthlibrary online. you can actually download don weaver’s book on soil remineralizationfor free in pdf format, and they recommend about 80 percent land minerals, like the rockdust, and 20 percent sea minerals. and the sea minerals you can either foil or sprayon so that you have a more immediate uptake of the trace minerals into your plants, andthey will respond. yes? woman: how do you supplement vegetables duringthe winter months? because you don’t have tomatoes. john: sure. the question was how do you supplementvegetables in the winter months when you can’t grow tomatoes. as much as i grow my own food,and i like to say i grow about 90, 95 percent

of my vegetables year round, of course inthe wintertime i’m not growing my own tomatoes so i just buy tomatoes. another thing i’llshow during my talk, which i actually should’ve showed, these are tomatoes from my garden.i don’t have tomatoes in my garden fresh, i dehydrate my excess harvest at a low temperature.so i dehydrate these in the dehydrator at below 118 degrees, which keeps the enzymesmore active and keeps more nutrients in there. i didn’t add sulfur to any of these forthe nice bright colors. so in the wintertime i like to buy tomatoes, i generally like tobuy the capari tomatoes which are hot house grown, which are even better than the organictomatoes that are still pink and bounce. so i like to mix some of those caparis in, mydry tomatoes that are high-nutrient dense,

and have really good flavor, and it reallyups the flavor and then also it has a thickener to make my salad thicker rather than drinkingsomething that’s like a liquid smoothie. yes in the back. woman: is there a tool so you can get thesame thickness? john: yes, there’s many tools. the standardtool is called the mandolin. there’s many different ones out there. you can buy a $400mandolin that’s made in japan that has precision slices every single time that’s a wasteof money. i mean if you’re just dehydrating the stuff, just use a knife, and if it’snot perfect the dehydrator doesn’t really care and when you’re eating it it doesn’treally care either.

woman: if i don’t do it even, one turnsblack. john: i see, so she does it in the oven. iwould recommend getting the proper tool. once again, i’m really into getting the propertool. my grandfather taught me, “the right tool for the right job,” and the dehydratorto me is the right tool. you can also use the sun, make a solar dehydrator. they havesome fabulous free plans online that you can make, and you can actually use less power.yes. man: what is your favorite dehydrator? john: so my favorite dehydrator is calledthe excalibur brand dehydrator, and that one just kicks butt. it works efficiently, ithas an adjustable thermostat, flows a lot

of air. i only recommend the 9-tray for peoplethat are in gardening and farming because it has 15 by 15 inch trays that have a lotof space so you can dehydrate a lot of food. yes. woman: do you do it outdoors in a coveredarea, or…? john: my dehydrator runs in my kitchen. youcan run it outdoors. it should be covered if you’re going to do that. yes. woman: do you take care of bugs? john: the question is do you take care ofbugs. i have many thoughts on bugs, and this could go quite a bit of time. number one,i like to plant extra for bugs. so sometimes

if i plant extra, even if the bugs get someor i lose some from disease, i still have some plants. that’s the easiest way. numbertwo, i could use manual control. so people are lazy and they don’t like to go out thereand pick out all their caterpillars and whatever, and i just like to sit there and pick themoff one by one. i like to smush aphids just with my fingers. that’s the next level,escalating it. next level i could use something like water spray, so spray high-pressure waterwith a special sprayer that i have, and it blasts the bugs off the plants. another thingi could do is beneficial insects. once we get to another point it gets pretty bad, andthen i’ll break out the neem oil and dr. bronner’s sasser soap. i have a really goodepisode on this on youtube, where i describe

the process. i use a special atomizer sprayerthat sprays it out at high volumes so that instead of using a pump sprayer all day especiallyif you’re growing high number of crops, the atomizer sprays just blasts it, and literallymakes a fog. it fogs the stuff everywhere and that’s another way i use. i may alsouse diatomaceous earth, it’s powdery, comes with pain, so i prefer the neem oil and dr.bronner’s, and that seems to solve most issues. it depends on a case-by-case basis.i like to spray only when it’s absolutely necessary, even though it’s organic, i stilldon’t like to spray because it could have negative effects on your soil biology andwhatnot. yes. man: i just started using the rock dust thisyear in my garden and some of the boogie brew,

and i saw that some of my leaves started gettingthis waxy, residual stuff on my cabbages and stuff. it brought the bugs back. john: thank you, so actually that was oneof the things i didn’t mention and he reminded me. grow healthy plants. healthy people, ifyou’re eating healthy food you’ll get far less sick than someone who’s eatingjunk food every night or so. so like us , our plants, if we nourish our plants, use somethinglike worm gold plus castings, which will actually increase your plant’s immunity that georgeoutside is talking about, you’ll have less bug problems. and i'm still working on it,my garden’s not perfect by any means. i make a couple videos on youtube, doesn’tmean i’m a perfect gardener. i’m still
